St. Elizabeth of Hungary

A thirteenth-century Hungarian princess who married at fourteen, bore three children, and was known for caring personally for the sick and poor. After her husband's death on Crusade she was expelled from court, gave away everything, and died in radical poverty at twenty-four. She is the patron saint of bakers, the homeless, and the Franciscan Third Order.

Why it matters for your parish: A young royal who chose the poor over privilege — her story of stripping away comfort to serve the suffering is one of the most dramatic in medieval hagiography. The miracle of the roses is one of the most beloved saint legends.
